  • 9 oz cheese-filled tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the tortellini in salted boiling water per package instructions until al dente. Drain and rinse under cold water.
  2. While the tortellini cooks, chop cherry tomatoes, dice cucumber, and finely chop red onion.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
  4. In a large mixing bowl, combine cooked tortellini with prepared vegetables. Pour dressing over the top and gently toss until well-coated.
