- 1.5 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup cream cheese frosting
- 8–16 candy eyes
- 2 tablespoons Halloween sprinkles
- Butter for the griddle
Instructions
- Whisk flour, sugar, baking powder, and salt in a large mixing bowl.
- In a separate bowl, whisk together buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Heat a non-stick skillet over medium heat and grease with butter.
- Pour 1/4 cup of batter per pancake and cook until bubbles form on top, then flip and cook until golden brown.
- Place pancakes on a plate and let them cool for 2-3 minutes.
- Fill a piping bag with cream cheese frosting and pipe overlapping lines across the pancake to resemble bandages, leaving a small gap for eyes.
- Place two candy eyes in the gap and decorate the plate with Halloween sprinkles.
