Description

Hearty oatmeal muffins blended with real pumpkin puree and rich chocolate chips. A perfect balance of nutrition and indulgence for on-the-go mornings.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1 egg
  • 1.5 cups rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F and line a muffin tin with liners.
  2. In a large bowl, whisk together flour, oats, baking soda, and cinnamon.
  3. In a separate bowl, mix pumpkin puree, maple syrup, and the egg until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. Fold in the chocolate chips using a spatula.
  6. Scoop batter into muffin tins, filling each about 3/4 full.
  7. Bake for 20-22 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.
