- 1 lb ground beef (80% lean)
- 1 small onion
- 2 cloves garlic
- 1 cup breadcrumbs
- 1 large egg
- ¼ cup milk
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 red bell pepper
- 1 green bell pepper
- 1 zucchini
- Wooden skewers (soaked)
Instructions
- In a bowl, combine beef, breadcrumbs, egg, milk, parsley, smoked paprika, salt, pepper, and minced garlic until mixed.
- Shape the mixture into bite‑sized meatballs or press onto skewers.
- Thread onion, bell pepper, zucchini, and meat alternately onto each skewer.
- Brush the skewers lightly with olive oil.
- Preheat grill to 375°F (190°C). Keep flames low‑medium.
- Cook kabobs, turning every 2–3 minutes, until browned and internal temperature reaches 160°F (71°C).
- Let rest 2 minutes, then serve.
