Description

A refreshing and zesty side dish featuring creamy pinto beans infused with garlic, cumin, fresh lime juice, and bright cilantro.


Ingredients

  • 2 cans (15 oz each) pinto beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1/2 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/4 cup water or vegetable broth
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the ground cumin and black pepper, stirring for 30 seconds to toast the spices.
  5. Pour in the rinsed pinto beans and stir to coat them in the aromatics.
  6. Add the water or vegetable broth and simmer on low for 10-15 minutes.
  7. Remove the pot from the heat and stir in the fresh lime juice.
  8. Fold in the chopped fresh cilantro and season with salt to taste.
