A thick, frosty smoothie bowl blending tart raspberries and sweet nectarines. Topped with fresh fruit and seeds for a balanced, refreshing breakfast.


Ingredients

  • 2 cups frozen raspberries
  • 2 cups frozen nectarine chunks
  • 1/2 cup Greek yogurt or thick coconut cream
  • 1/4 cup almond milk
  • 2 tablespoons maple syrup
  • 1 tablespoon chia seeds
  • 1/2 cup fresh raspberries for topping
  • 1/2 cup sliced fresh nectarines for topping
  • 1/4 cup granola for topping

Instructions

  1. Place frozen raspberries, frozen nectarines, yogurt, and maple syrup into a blender.
  2. Add 2 tablespoons of almond milk to start.
  3. Blend on low speed, using a tamper to push the frozen fruit down into the blades.
  4. Continue blending, adding more almond milk one tablespoon at a time, until a thick, smooth consistency is reached.
  5. Scoop the mixture into two chilled bowls and smooth the surface with a spoon.
  6. Arrange fresh raspberries, sliced nectarines, and granola on top of the base.
  7. Sprinkle chia seeds over the fruit for added texture.
