- 16 oz frozen peas, thawed and drained
- 1/2 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1/4 cup red onion, finely diced
- 1/2 cup cooked bacon, crumbled
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Thaw the peas and pat them dry with a paper towel.
- Mince the red onion and soak in cold water for 5 minutes, then drain.
- Whisk together mayonnaise, apple cider vinegar, salt, and pepper in a small bowl.
- In a large bowl, combine the dried peas and diced red onion.
- Pour the dressing over the vegetables and fold gently with a spatula.
- Fold in the crumbled bacon and chopped parsley.
- Refrigerate for at least one hour before serving.
