- 3 large egg yolks
- 1/2 cup granulated sugar
- 1 cup mascarpone cheese (room temperature)
- 3 large egg whites
- 1 package (7 oz) ladyfingers (savoiardi)
- Unsweetened cocoa powder, for dusting
Instructions
- Brew espresso or coffee and let it cool.
- In a bowl, whisk egg yolks and sugar until pale and creamy. Fold in mascarpone until smooth.
- In another bowl, beat egg whites to stiff peaks and gently fold into the mascarpone mixture.
- Quickly dip each ladyfinger into cooled coffee and layer them in your serving dish.
- Spread half the mascarpone mixture over the ladyfingers; repeat with another layer of dipped ladyfingers and top with remaining mascarpone.
- Refrigerate for at least 4 hours or overnight. Dust with cocoa powder before serving.
