Ingredients

  • 1 cup strong espresso or brewed coffee, cooled
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 1 cup mascarpone cheese (room temperature)
  • 3 large egg whites
  • 1 package (7 oz) ladyfingers (savoiardi)
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Brew espresso or coffee and let it cool.
  2. In a bowl, whisk egg yolks and sugar until pale and creamy. Fold in mascarpone until smooth.
  3. In another bowl, beat egg whites to stiff peaks and gently fold into the mascarpone mixture.
  4. Quickly dip each ladyfinger into cooled coffee and layer them in your serving dish.
  5. Spread half the mascarpone mixture over the ladyfingers; repeat with another layer of dipped ladyfingers and top with remaining mascarpone.
  6. Refrigerate for at least 4 hours or overnight. Dust with cocoa powder before serving.
