  • 1 cup quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 cup bell peppers, chopped
  • 1 cup cucumbers, diced
  • 1 cup shredded carrots
  • 3 tablespoons tahini
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Water (as needed for dressing)
  • Sesame seeds (for garnish)
  • Chopped scallions (for garnish)

Instructions

  1. Rinse quinoa under cold water. Combine quinoa with 2 cups of water or vegetable broth in a saucepan. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until fluffy.
  2. In a skillet over medium heat, add olive oil and sauté drained chickpeas until golden brown for about 5-7 minutes. Season with salt and pepper.
  3. Chop bell peppers, cucumbers, and carrots into bite-sized pieces.
  4. In a small bowl or jar, whisk together tahini, soy sauce or tamari, lemon juice, minced garlic, and enough water to achieve desired consistency.
  5. Assemble bowls starting with quinoa as the base, topped with sautéed chickpeas and fresh vegetables.
  6. Drizzle sesame dressing over the top and garnish with sesame seeds and chopped scallions before serving.
