  • 2 lbs beef chuck, cut into 12 inch cubes
  • 1 cup dry red wine (Cabernet Sauvignon or Merlot)
  • 2 medium onions, chopped
  • 3 medium carrots, sliced
  • 4 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 3 medium potatoes, diced
  • 4 cups low-sodium beef broth
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Season beef with salt and pepper; sear in batches until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions until translucent. Add garlic, carrots, and mushrooms; cook until softened.
  3. Pour in red wine, scraping browned bits from the pot. Simmer for about 5 minutes.
  4. Return beef to the pot along with potatoes, herbs, and beef broth. Bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 1.5-2 hours until beef is tender.
  6. Adjust seasoning before serving.
