  • 1/2 cup panko breadcrumbs
  • 1 large egg, beaten
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh dill, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • Salt and black pepper to taste
  • 2 tbsp vegetable oil for frying

Instructions

  1. Drain salmon and flake it into a mixing bowl using a fork.
  2. Mix in panko, beaten egg, Dijon mustard, and half of the fresh dill.
  3. Shape the mixture into 8 equal-sized patties, about 1 inch thick.
  4. Combine mayonnaise, lemon juice, and the remaining dill in a small bowl for the tartar sauce.
  5. Heat oil in a skillet over medium-high heat until shimmering.
  6. Fry patties for 4 minutes per side until golden brown and crispy.
  7. Plate with a swirl of tartar sauce and serve immediately.
