Simple to prepare yet satisfying, this turkey pot pie will quickly become a beloved favorite in your home.

Ingredients

Scale
  • 2 cups cooked turkey, shredded or diced
  • 1 pre-made pie crust (or homemade)
  • 1 cup carrots, chopped
  • 1 cup peas (frozen or fresh)
  • 1 cup corn (frozen or fresh)
  • 1 cup celery, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup chicken broth
  • ½ cup milk (or cream)
  • ¼ cup all-purpose flour
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Egg wash (1 egg mixed with water) for brushing

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet over medium heat, melt the butter and sauté onions, carrots, and celery until softened (about 5 minutes). Stir in garlic for an additional minute.
  3. Add cooked turkey, peas, and corn. Pour in chicken broth and milk; sprinkle flour over the mixture and stir until combined. Cook until thickened (about 5-7 minutes) and season with thyme, salt, and pepper.
  4. Roll out your pie crust on a floured surface if using homemade dough. Place one layer into your pie dish; pour in the turkey filling evenly before covering it with another layer of crust.
  5. Cut slits into the top crust for steam vents and brush lightly with egg wash.
  6. Bake for about 30-35 minutes or until golden brown. Allow to cool slightly before slicing to serve.
