  • 4 lbs beef short ribs
  • 2 cups 100% pure pomegranate juice
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season short ribs generously with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the short ribs until browned on all sides (3-4 minutes per side). Remove from pot.
  3. In the same pot, sauté chopped onions and minced garlic until fragrant. Add pomegranate juice and beef broth to deglaze the pot, scraping up brown bits.
  4. Return short ribs to the pot along with thyme and rosemary. Cover tightly and braise in the oven for 3 hours until tender.
  5. Once cooked, remove short ribs from the pot. Skim excess fat from the braising liquid, then whisk in cornstarch mixture to thicken sauce before serving.
