- 4 lbs beef short ribs
- 2 cups 100% pure pomegranate juice
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 tablespoons cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Preheat oven to 300°F (150°C).
- Season short ribs generously with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat and sear the short ribs until browned on all sides (3-4 minutes per side). Remove from pot.
- In the same pot, sauté chopped onions and minced garlic until fragrant. Add pomegranate juice and beef broth to deglaze the pot, scraping up brown bits.
- Return short ribs to the pot along with thyme and rosemary. Cover tightly and braise in the oven for 3 hours until tender.
- Once cooked, remove short ribs from the pot. Skim excess fat from the braising liquid, then whisk in cornstarch mixture to thicken sauce before serving.
