Description
Hearty ground beef burritos smothered in a rich, smoky chipotle cream sauce and topped with melted Monterey Jack cheese.

- 1 lb ground beef
- 8 medium flour tortillas
- 1/2 cup sour cream
- 2 chipotle peppers in adobo sauce
- 1 tbsp adobo sauce
- 2 cups Monterey Jack cheese, shredded
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tbsp lime juice
- Salt and black pepper to taste
Instructions
- Brown the ground beef in a skillet over medium-high heat until cooked through. Drain excess fat.
- Add diced onion and minced garlic to the beef; sauté until onions are translucent.
- Stir in cumin, chili powder, salt, and pepper. Cook for 2 minutes to toast spices.
- Place a portion of beef and a sprinkle of cheese in each tortilla. Roll tightly, tucking in the ends.
- Blend sour cream, chipotle peppers, adobo sauce, and lime juice until smooth.
- Place burritos seam-side down in a baking dish. Spread chipotle sauce over the top and cover with remaining cheese.
- Bake at 400°F (200°C) for 10-12 minutes until cheese is bubbly and browned.
