Description

Hearty ground beef burritos smothered in a rich, smoky chipotle cream sauce and topped with melted Monterey Jack cheese.


Ingredients

  • 1 lb ground beef
  • 8 medium flour tortillas
  • 1/2 cup sour cream
  • 2 chipotle peppers in adobo sauce
  • 1 tbsp adobo sauce
  • 2 cups Monterey Jack cheese, shredded
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tbsp lime juice
  • Salt and black pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium-high heat until cooked through. Drain excess fat.
  2. Add diced onion and minced garlic to the beef; sauté until onions are translucent.
  3. Stir in cumin, chili powder, salt, and pepper. Cook for 2 minutes to toast spices.
  4. Place a portion of beef and a sprinkle of cheese in each tortilla. Roll tightly, tucking in the ends.
  5. Blend sour cream, chipotle peppers, adobo sauce, and lime juice until smooth.
  6. Place burritos seam-side down in a baking dish. Spread chipotle sauce over the top and cover with remaining cheese.
  7. Bake at 400°F (200°C) for 10-12 minutes until cheese is bubbly and browned.
