- 3 cans (15 oz each) navy beans, drained and rinsed
- 6 slices thick-cut bacon, chopped
- 1 medium yellow onion, finely diced
- 1/2 cup brown sugar, packed
- 1/2 cup ketchup
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1/2 tsp black pepper
Instructions
- Cook the chopped bacon in a skillet over medium heat until crisp. Remove bacon and leave 1 tbsp of fat in the pan to sauté the diced onions until translucent.
- Transfer the beans, cooked bacon, and sautéed onions into the slow cooker.
- In a medium bowl, whisk together brown sugar, ketchup, Dijon mustard, apple cider vinegar, and black pepper.
- Pour the sauce over the beans in the crockpot and stir gently to combine.
- Cover and cook on Low for 7 to 8 hours until the beans are tender and the sauce is thick.
- Stir once more and serve hot.
