Description

Rich and sticky slow cooker baked beans featuring a balance of brown sugar, smoky bacon, and a hint of tangy mustard.


Ingredients

  • 3 cans (15 oz each) navy beans, drained and rinsed
  • 6 slices thick-cut bacon, chopped
  • 1 medium yellow onion, finely diced
  • 1/2 cup brown sugar, packed
  • 1/2 cup ketchup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/2 tsp black pepper

Instructions

  1. Cook the chopped bacon in a skillet over medium heat until crisp. Remove bacon and leave 1 tbsp of fat in the pan to sauté the diced onions until translucent.
  2. Transfer the beans, cooked bacon, and sautéed onions into the slow cooker.
  3. In a medium bowl, whisk together brown sugar, ketchup, Dijon mustard, apple cider vinegar, and black pepper.
  4. Pour the sauce over the beans in the crockpot and stir gently to combine.
  5. Cover and cook on Low for 7 to 8 hours until the beans are tender and the sauce is thick.
  6. Stir once more and serve hot.
