Description

Rich and velvety mashed potatoes slow-cooked to tenderness and folded with nutty, toasted browned butter and heavy cream.


Ingredients

  • 5 lbs Russet potatoes, peeled and cubed
  • 1 cup unsalted butter
  • 1 cup heavy cream
  • 4 cloves garlic, smashed
  • 2 tsp salt
  • 1 tsp black pepper
  • Water or chicken broth (as needed)

Instructions

  1. Place cubed potatoes and garlic in the slow cooker.
  2. Add enough water or broth to barely cover the potatoes.
  3. Cook on low for 7-8 hours or high for 3-4 hours until tender.
  4. While potatoes cook, melt butter in a skillet over medium heat until it browns and smells nutty.
  5. Drain the cooked potatoes from the slow cooker.
  6. Mash the potatoes using a hand masher or ricer.
  7. Stir in the browned butter and heavy cream until smooth.
  8. Season with salt and black pepper to taste.
