- 1 package (32 oz) pre-cooked meatballs
- 1 can (20 oz) pineapple chunks in juice
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
Instructions
- Place the meatballs in the bottom of a slow cooker in a single layer.
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger until the sugar dissolves.
- Pour the sauce mixture over the meatballs and gently fold in the pineapple chunks.
- Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
- Check the sauce consistency 30 minutes before serving; if too thin, remove the lid for the final stretch.
- Stir gently and serve warm with toothpicks or over rice.
