Description

A sweet and savory tropical appetizer featuring tender meatballs simmered in a rich pineapple and soy glaze. Perfect for parties or a quick dinner over rice.


Ingredients

  • 1 package (32 oz) pre-cooked meatballs
  • 1 can (20 oz) pineapple chunks in juice
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Instructions

  1. Place the meatballs in the bottom of a slow cooker in a single layer.
  2. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, garlic, and ginger until the sugar dissolves.
  3. Pour the sauce mixture over the meatballs and gently fold in the pineapple chunks.
  4. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
  5. Check the sauce consistency 30 minutes before serving; if too thin, remove the lid for the final stretch.
  6. Stir gently and serve warm with toothpicks or over rice.
