Description

A succulent, melt-in-your-mouth pulled pork infused with the sweet and tangy flavors of pineapple and soy. Perfectly slow-cooked for maximum tenderness.


Ingredients

  • 4 lb pork shoulder (pork butt)
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp apple cider vinegar
  • 1 tbsp cooking oil

Instructions

  1. Sear the pork shoulder in a skillet over medium-high heat until browned on all sides.
  2. Whisk together pineapple juice, soy sauce, brown sugar, garlic, ginger, and vinegar in a bowl.
  3. Place the seared pork in the slow cooker and pour the marinade over it.
  4. Cover and cook on Low for 8 hours or High for 4-5 hours until tender.
  5. Remove pork to a plate and shred using two forks, discarding excess fat.
  6. Simmer the remaining pot liquid in a saucepan for 10 minutes until reduced by half.
  7. Toss the shredded pork with the reduced glaze and serve.
