Description

A healthy, protein-rich turkey chili that simmers in the slow cooker for maximum flavor development. This lean version of the classic comfort dish is ideal for families and meal prepping.


Ingredients

  • 1 lb lean ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz) diced tomatoes
  • 2 cans (15 oz) kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium-high heat and brown the ground turkey until cooked through.
  2. Add diced onion and red bell pepper to the skillet and sauté for 5 minutes until softened.
  3. Transfer the meat and vegetable mixture to the slow cooker.
  4. Stir in the diced tomatoes, kidney beans, minced garlic, chili powder, and cumin.
  5. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
  6. Stir in salt and black pepper before serving.
