A healthy, protein-rich turkey chili that simmers in the slow cooker for maximum flavor development. This lean version of the classic comfort dish is ideal for families and meal prepping.

- 1 lb lean ground turkey
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 cans (15 oz) diced tomatoes
- 2 cans (15 oz) kidney beans, drained and rinsed
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a skillet over medium-high heat and brown the ground turkey until cooked through.
- Add diced onion and red bell pepper to the skillet and sauté for 5 minutes until softened.
- Transfer the meat and vegetable mixture to the slow cooker.
- Stir in the diced tomatoes, kidney beans, minced garlic, chili powder, and cumin.
- Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
- Stir in salt and black pepper before serving.
