Description
Tender chicken thighs marinated in a smoky blend of chipotle peppers, garlic, and cider vinegar, then seared to perfection.
Ingredients

- 2 lbs chicken thighs, bone-in skin-on
- 3 chipotle peppers in adobo sauce
- 2 tbsp adobo sauce from the can
- 3 tbsp apple cider vinegar
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Blend chipotles, adobo sauce, vinegar, garlic, cumin, and 1 tbsp oil until smooth.
- Coat chicken thighs in marinade and refrigerate for at least 2 hours.
- Heat remaining oil in a skillet over medium-high heat.
- Sear chicken skin-side down for 6 minutes until golden brown.
- Flip chicken and cook for another 5 minutes.
- Pour remaining marinade into the pan and simmer for 10 minutes.
- Cover and cook on low for 5 final minutes until internal temp reaches 165F.
