- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream the softened butter until smooth.
- Beat in the eggs and vanilla extract until the mixture is light and fluffy.
- Gradually stir in the strawberry cake mix until a soft dough forms.
- Scoop rounded tablespoons of dough and place them 2 inches apart on the baking sheets.
- Bake for 9 to 11 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the pan for 5 minutes before moving them to a wire rack to cool completely.
