Description

  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 cups chopped romaine lettuce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen or canned corn, thawed
  • 1 ripe avocado, diced
  • 1/4 cup Greek yogurt
  • 1 tbsp chipotle peppers in adobo, minced
  • 2 tbsp fresh lime juice
  • 1 tsp honey
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Season chicken breasts with salt, pepper, and cumin.
  2. Grill chicken over medium-high heat for 6-7 minutes per side until internal temperature reaches 165°F.
  3. Let chicken rest for 5 minutes before slicing into cubes.
  4. In a bowl, whisk together Greek yogurt, minced chipotle, lime juice, and honey until smooth.
  5. Combine romaine lettuce, black beans, and corn in a large mixing bowl.
