A lean and flavor-packed twist on traditional pork carnitas. Slow-cooked in citrus and spices, then broiled for a perfect crispy finish.

- 2 lbs boneless skinless chicken thighs
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Season chicken thighs with salt and pepper and place in the slow cooker.
- Whisk together orange juice, lime juice, garlic, cumin, oregano, and paprika; pour over chicken.
- Cook on low for 6-8 hours or high for 3-4 hours until tender.
- Remove chicken and shred using two forks in a large bowl.
- Strain the cooking liquid into a pan and simmer until reduced by half.
- Spread shredded chicken on a baking sheet, drizzle with reduced sauce, and broil for 5-8 minutes until crispy.
