Description

A lean and flavor-packed twist on traditional pork carnitas. Slow-cooked in citrus and spices, then broiled for a perfect crispy finish.


Ingredients

  • 2 lbs boneless skinless chicken thighs
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Season chicken thighs with salt and pepper and place in the slow cooker.
  2. Whisk together orange juice, lime juice, garlic, cumin, oregano, and paprika; pour over chicken.
  3. Cook on low for 6-8 hours or high for 3-4 hours until tender.
  4. Remove chicken and shred using two forks in a large bowl.
  5. Strain the cooking liquid into a pan and simmer until reduced by half.
  6. Spread shredded chicken on a baking sheet, drizzle with reduced sauce, and broil for 5-8 minutes until crispy.
