Description

A rich and creamy copycat version of the famous Zuppa Toscana, featuring savory Italian sausage, hearty potatoes, and fresh kale in a garlic-cream broth.


Ingredients

  • 1 lb Italian sausage (mild or hot)
  • 1 cup diced onion
  • 4 cloves minced garlic
  • 3 large russet potatoes, sliced into half-moons
  • 6 cups chicken broth
  • 2 cups chopped kale
  • 1 cup heavy cream
  • Salt and black pepper to taste

Instructions

  1. In a large pot over medium heat, brown the Italian sausage, breaking it into small crumbles until cooked through.
  2. Add the diced onions to the pot and sauté for 3-5 minutes until translucent.
  3. Stir in the minced garlic and cook for another 60 seconds until fragrant.
  4. Pour in the chicken broth and add the sliced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
