A bright, tangy, and incredibly crisp summer salad featuring English cucumbers and fresh dill. Perfect as a refreshing side dish for grilled meats or a light lunch.

- 2 large English cucumbers, thinly sliced
- 1/2 cup apple cider vinegar
- 2 tablespoons granulated sugar
- 1/4 cup fresh dill, chopped
- 1 teaspoon sea salt (for drawing out moisture)
- 1/2 teaspoon salt (for dressing)
- 1/2 teaspoon black pepper
Instructions
- Slice cucumbers into 1/8 inch rounds.
- Toss slices with 1 teaspoon salt and let sit in a colander for 15 minutes.
- Rinse cucumbers with cold water and pat completely dry with paper towels.
- Whisk together vinegar, sugar, and 1/2 teaspoon salt until sugar dissolves.
- Stir in chopped fresh dill and black pepper.
- Gently fold in the drained cucumbers until well coated.
- Chill for at least 30 minutes before serving.
