- 1 cup granulated sugar (for caramel)
- 4 tbsp salted butter
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350°F and grease two 8-inch cake pans.
- Whisk flour, baking powder, soda, cinnamon, and salt together.
- Beat eggs and brown sugar until fluffy, then whisk in oil.
- Fold in the grated carrots until evenly distributed.
- Gently stir the dry ingredients into the wet mixture until just combined.
- Divide batter between pans and bake for 30-35 minutes.
- Prepare caramel by melting granulated sugar until amber, stirring in butter and cream.
- Cool cakes completely, layer them, and pour the cooled caramel glaze over the top.
