  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup Bailey's Irish Cream
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • ¼ cup cocoa powder

Instructions

  1. Preheat oven to 325°F (163°C). Grease a springform pan lightly with butter.
  2. Combine graham cracker crumbs and melted butter in a bowl. Press mixture into the bottom of the springform pan to form a crust.
  3. In another bowl, beat cream cheese and sugar until smooth. Gradually mix in Bailey’s Irish Cream.
  4. Add sour cream and vanilla extract; mix until smooth. Sift in cocoa powder and combine thoroughly.
  5. Pour filling over the crust, smoothing out the top with a spatula.
  6. Bake for about 60 minutes or until edges are set but center is slightly jiggly. Turn off oven and let cool inside for an hour before refrigerating overnight.
