- 2 lbs beef chuck, cut into 1-inch cubes
- 1 can (14.9 oz) Guinness stout beer
- 2 medium onions, chopped
- 3 medium carrots, sliced
- 2 large potatoes, diced
- 2 bay leaves
- 4 cloves garlic, minced
- 4 cups beef broth
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Prepare the ingredients by chopping onions, carrots, and potatoes; mince the garlic.
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides; remove and set aside.
- In the same pot, sauté onions and garlic until softened. Add carrots and potatoes; cook for an additional 5 minutes.
- Pour in the Guinness stout, scraping the bottom of the pot to release browned bits. Return beef to the pot and add beef broth until everything is covered.
- Add bay leaves and bring to a gentle boil. Reduce heat to low, cover partially with a lid, and simmer for about 2-3 hours until beef is tender.
