  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 can (14.9 oz) Guinness stout beer
  • 2 medium onions, chopped
  • 3 medium carrots, sliced
  • 2 large potatoes, diced
  • 2 bay leaves
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Prepare the ingredients by chopping onions, carrots, and potatoes; mince the garlic.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides; remove and set aside.
  3. In the same pot, sauté onions and garlic until softened. Add carrots and potatoes; cook for an additional 5 minutes.
  4. Pour in the Guinness stout, scraping the bottom of the pot to release browned bits. Return beef to the pot and add beef broth until everything is covered.
  5. Add bay leaves and bring to a gentle boil. Reduce heat to low, cover partially with a lid, and simmer for about 2-3 hours until beef is tender.
