  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 package (14 oz) empanada dough (or homemade)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. In a skillet over medium heat, sauté chopped onions in oil until translucent. Add minced garlic and ground beef; cook until browned.
  2. Stir in cumin, paprika, salt, and pepper; cook for another 3-4 minutes until fragrant.
  3. Remove from heat and mix in shredded cheeses until melted. Let the filling cool slightly.
  4. Roll out empanada dough on a floured surface and cut into circles (4-5 inches).
  5. Place 1-2 tablespoons of filling onto each dough circle; fold over and crimp edges with a fork.
  6. Preheat oven to 375°F (190°C). Brush empanadas with egg wash and bake for 25-30 minutes until golden brown.
