Description

A luxurious and healthy pasta dish featuring pan-seared salmon, homemade basil pesto, and the buttery crunch of toasted pine nuts.


Ingredients

  • 1 lb Salmon fillets
  • 12 oz Pasta (linguine or spaghetti)
  • 2 cups Fresh basil leaves
  • 1/3 cup Pine nuts
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Extra virgin olive oil
  • 3 cloves Garlic
  • 1 Lemon (juiced)
  • Salt and black pepper to taste

Instructions

  1. Toast pine nuts in a dry skillet over medium heat until golden brown.
  2. Blend basil, toasted pine nuts, garlic, parmesan, and olive oil until combined.
  3. Cook pasta in salted water according to package directions; reserve 1 cup of pasta water before draining.
  4. Season salmon with salt and pepper and sear in a pan for 4-5 minutes per side.
  5. Remove salmon and break into bite-sized chunks.
  6. Toss pasta with pesto and a splash of pasta water over low heat until creamy.
  7. Gently fold in the flaked salmon and serve immediately with a squeeze of lemon.
